Explore Berry Rum

A sweet, tangy glaze built on Berry Rum and fresh berries. Exceptional on grilled chicken, pork tenderloin, or salmon. The kind of sauce that makes people ask for the recipe.

Instructions

  1. 1

Combine berries, rum, honey, balsamic, soy sauce, garlic, and red pepper flakes in a small saucepan.

  2. 2

Bring to a simmer over medium heat, stirring occasionally.

  3. 3

Cook for 15–18 minutes until berries have broken down and sauce has thickened.

  4. 4

Strain through a fine mesh sieve if you want a smooth glaze, or leave chunky for more texture.

  5. 5

    Season with salt and pepper.

  6. 6

Brush on meat during the last 5 minutes of grilling. Apply in two coats for a lacquered finish.

Bartender's Tip

The glaze burns easily because of the sugar content. Apply only in the last few minutes of cooking and watch it closely.
